Banana Strawberry Muffins for Breakfast or a Snack
These Banana Strawberry Muffins are full of mashed bananas and bite size pieces of fresh strawberries. Stir up a batch for breakfast or a snack!
Preheat your oven to 350 degrees.
In a large bowl, whisk together flour, baking soda, salt, and cinnamon, set aside.
In another bowl, mix butter and brown sugar until fluffy. Add vanilla and eggs, mix again.
Slowly begin adding the dry ingredients, mixing well between each addition.
In another bowl, mash up your bananas with a fork. Stir those into your batter.
Line a muffin tin with liners, and fill the cups about 3/4 full. Add 4-5 strawberry pieces to each cup.
Bake for 15-18 minutes until muffins begin to turn golden brown on top.
