Banana Strawberry Muffins for Breakfast or a Snack

These Banana Strawberry Muffins are full of mashed bananas and bite-size pieces of fresh strawberries.  Stir up a batch for breakfast or a snack!

I am ashamed to admit that when when my kids were young, I didn’t make these banana strawberry muffins.  I usually just plunked a bowl of cereal in front of them and called it good.

I wish I could have a do-over because I’d definitely put a little more effort into their breakfasts.  What makes me feel a bit better is knowing they’ll appreciate it more as adults when they come to visit than they would have as kids anyway!

Banana Strawberry Muffins Ingredients:

  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup softened butter
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 3 medium bananas, mashed
  • 1 cup strawberries, chopped

Banana Strawberry Muffin Directions:

  1. Preheat your oven to 350 degrees.
  2. In a large bowl, whisk together flour, baking soda, salt, and cinnamon; set aside.
  3. In another bowl, mix butter and brown sugar until fluffy.  Add vanilla and eggs; mix again.
  4.  Slowly begin adding the dry ingredients, mixing well between each addition.
  5. In another bowl, mash up your bananas with a fork.  Stir those into your batter.
  6. Line a muffin tin with liners, and fill the cups about 3/4 full.  Add 4-5 strawberry pieces to each cup.
  7. Bake for 15-18 minutes until muffins begin to turn golden brown on top.

  1. Those look SO yummy, Angie! I think they would be good with blueberries, too. Thanks for the recipe. Don’t fret about not making them for your kids’ breakfasts–they might not have liked them anyway, or been in too much of a hurry to eat them! And they grew up healthy despite not having them, right? But I”m gonna make them and eat them all myself! (Not really. I’ll offer them to the grandsons just to see how they go over!)
