Many years ago, one of my neighbors gave us a loaf of lemon poppy seed bread for Christmas. It was so delicious and I’ve often kicked myself for not asking for her recipe.
Out of the blue, she messaged me on Facebook to see how I am doing.
I don’t want to keep kicking myself, so I asked for her recipe. She gladly gave it to me and gave me permission to share it here!
Easy Glazed Lemon Poppy Seed Bread Recipe
INGREDIENTS
INSTRUCTIONS
1. Preheat your oven to 300 degrees. Spray a 9 x 5 inch loaf pan generously with cooking spray. In a large bowl, whisk together flour, salt, and baking powder. Set aside.
2. In another bowl, beat the sugar and melted butter very well until fluffy. Add in eggs, mixing in between each. Add lemon juice, lemon zest, poppy seeds, and sour cream, mixing again just until combined.
3. Next, slowly alternate adding the dry ingredients and the milk, mixing between each addition.
4. Pour mixture into loaf pan and bake for 1 hour and 15 minutes. Allow the bread to cool before you add the glaze.
To make glaze, combine 1 cup powdered sugar and 2 Tbsp milk; whisk. Pour over bread.
