Try this Carrot Pineapple Banana Smoothie for a delicious way  to sneak some vegetables into  breakfast!  

In my quest to overhaul my overall health, I’ve made quite a few changes in my life.  These changes have surprised everyone who knows me well, but no one is more surprised about the changes than me!

I’ll be sharing more about the changes down the road, but today I want to tell you about an incredible new smoothie I’ve been making.  I call it my Sunrise Carrot Pineapple Banana Smoothie.  It’s like sunshine in a glass!

I’ve always liked pineapples, although I rarely eat them.  But until recently, I wouldn’t touch carrots with a 10-foot pole.

Not only do I like them now – I love them in this smoothie!

Carrot Pineapple Banana Smoothie

INGREDIENTS:

  •  1/2 cup chopped frozen pineapple
  • 1/2 cup fresh orange juice
  • 1/3 cup vanilla Greek yogurt
  • 1/2 cup chopped carrot
  • 1 frozen banana

INSTRUCTIONS:

I like to make smoothies with frozen fruit.  They make the smoothie thicker and there is no need to use the ice which can water your smoothie down.

I buy a bag of frozen pineapple at the store, but you could use fresh and cut it into chunks then freeze them.  You can freeze the carrots too, but I don’t.

Remove the peel from bananas and cut into slices.  Place on a single layer on a baking sheet and freeze for 24 hours.

Combine all ingredients in a blender.

Blend until smooth and frothy.
